The Jesus Diet: Week 6 - The Last Supper

      Well, it finally arrived. The final week of my first of 8 installments of diets this year. Granted, this last one was slightly longer (by about two weeks) than the rest will be, but it was so far, a great success. I have to admit though, by the end of the week I was ready to get started with my next diet - which you will have to stay tuned for the next post to read all about! But let's get to all the great creations I came up with during the week. Sunday, as per usual, I spent my entire afternoon cooking and prepping for the week. Below are the incredible recipes I came up with, and would say that I really knocked it out of the park in my final week of "The Jesus Diet"! The Jesus Diet: Week 5

  Well, we made it to the end of the 30 days, and I was feeling really great. Truly. By the end of week 4 I was finally able to fit into a skirt someone had given me months ago (see picture above), but it was too small for me at the time. I rewarded myself that day with a cheat meal. Ha ha - but that was the only one for a while. I have been proud of myself for staying consistent and disciplined throughout this diet, and I still have just one more week to go! So let's talk about how well Week 5 went, and all the fun recipes I came up with. Recipes for Week 5:   If Jesus were American: The Healthy Hot Dog Who doesn't love hot dogs? I know I do. But hot dogs are not exactly the healthiest things to be eating, and as many of us probably know what's in a hot dog is hardly appetizing to hear about. Well, I'd made it to the start of what was supposed to be my last week. But, I had no plan after that. Where was I going from here? Would I just stay on "The Jesus Diet" forever? I didn't even know how I would do a "cheat day",  or if I was supposed to even have one. But then again, I realized, this was my diet. I could make up my own rules and do whatever I wanted. If I wanted to have one cheat day a week I could do that. If I wanted to have 1 cheat day a year I could do that too. But the likelihood that I could survive an entire year (mentally) without something decadent (e.g. chocolate, cheeseburgers, burritos...) seemed minor. I also didn't think it was a good idea to have an entire cheat day, let alone doing that once a week. Especially if I wasn't exercising that much - which I really hadn't been. I'd only been to the gym twice, and after catching a cold there and feeling sick for several days, my body was screaming in pain for half of

The Jesus Diet: Week 3

  Week 3 started off nicely.  Breakfast was simple: grapes. Lunch was only slightly less humble: arugula & baby spinach with some sheep cheese and walnuts. Dinner was lovely.  A very, very small helping of chicken breast sauteed in half & half and spinach. On the side, some hummus-pesto, with baby carrots, a little bit of chopped up romaine lettuce and sauteed chickpeas.     On the second day of the week when I got home from work I tried going for a walk... But that didn't happen. See above video for reason. This was another delicious creation I came up with during the week and might I say, super easy to make as well. Sliced cucumber is the vegetable of choice for this dish; sauteed chickpeas; and the main star of the show, scrambled eggs with spinach, garlic, half & half and a little bit of sheep cheese on top. Week 3 went by just as quickly as week 2, with my standard fruits for breakfast and salads for lunch. The dinners were what you have already seen, but week
