The Viking Diet: Week 1

  The Viking Diet is off to a great start! I am pleased with the fact that although I miss some of those coveted carbs (potatoes, rice, bread), I don't crave them nearly as much as I thought I would and honestly, the foods I'm preparing are filling enough without them. Day 1 of the diet was fantastic. With plain yogurt and fresh strawberries for breakfast, I was off to a good start. My lunch was actually really delicious for as healthy as it was, if I do say so myself. I prepared grilled chicken breast, using my newest oil (which I actually really, really like, and did not think I would), and some salt for flavor... I made a spinach salad, which included fresh honey crisp apples, the chicken breast, walnuts and a special dressing I created myself. Sauteed garlic in walnut oil with a tiny dash of apple cider vinegar. Boom. A delicious healthy salad for lunch. Dinner was spinach which I boiled first, then placed in a skillet with garlic which had previously been sauteed with orga

  So, I was pretty irritated that after a good week of doing research on this diet and setting my notes aside...I lost those notes. I looked everywhere for them, both at work and at home in every possible place they could be - but to no avail. Therefore, last minute, on the day that I had to go grocery shopping for everything, I had to re-research everything and scramble just to find out what I was allowed to eat. Having said all that, I don't have reasons or history lessons behind the items that I've allotted for the diet. You'll just have to accept the fact that these are what the vikings ate, and be satisfied. Why The Viking Diet? Why not? They ate well, and seem pretty tough and strong...I suppose I'd like to be as well. But truthfully though, the vikings, in the research I can actually remember, ate well. They were fairly healthy by all accounts, and ate some pretty tasty stuff. Stuff I'm on board with. The hardest part of this diet will be the lack of starches
