The China Diet: Week 2

 

Week 2 was great, and actually went even better than the first week of the diet. My stomach has definitely shrunk and while there are no real complaints, the only small negative to that is that on my cheat day I can't eat nearly as much as I would like because I get so full so quickly now. But again, a problem I'm glad to have.

Day 1 was not as early as the previous week. I got to sleep in a little bit longer than normal, and decided to do my workout that evening. Which I did do. Doing it in the evening is always better for me. First of all, I am not a morning person and never have been. I've always had more energy at night and that is still true today even though I'm getting older. Shh...don't tell anyone. I can also do my workout longer in the evenings because I'm not pressed for time like I am in the mornings. But, if I have something to do in the evening after work, I make it a priority to wake up early and do the workout first thing in the morning.

Breakfast was yogurt with fresh blueberries


Lunch was two 100% grass-fed beef patties with some mozzarella on top. I did not finish part of the second patty and saved it for the next day. I also made a couple of versions of soybean patties, one with egg, one without. They were good, but a little too greasy. I had some of that as well and saved the rest for the following day.



Dinner was left over of the risotto from the night before...


Day 2 I did have to wake up at 5:45, did my Bible study, my workout and got my stuff together for my lunch. Same thing as the day before, and I honestly couldn't tell you what I had for breakfast as I did not take a picture. My guess is it was either oatmeal with blueberries or yogurt with blueberries.

That evening I had a hair appointment, and let's take a moment to admire the talent of my hair stylist.


Wednesday morning I woke up later than I probably should have, got my stuff done and left the workout for that evening. What ended up happening though was that I went for a long walk with my friend and skipped the arm and ab exercises.

Breakfast was oatmeal with cinnamon, almond milk and blueberries...


Lunch was mozzarella with grape seed oil and pine nuts, followed by an under cooked beef patty, which I did not finish...



Needless to say by the time I got home from the walk, I was absolutely famished. Good thing I made something absolutely delicious! So, very similar to the week before I made a chicken stir-fry, but this time I used baby bok choy, previously cooked (boiled) soy beans, and some garlic. It was amazing!




Thursday morning was once again, oatmeal with cinnamon, blueberries and almond milk...


Lunch was once again mozzarella with some pine nuts, followed by yet another beef patty...



I went for another long walk with my friend that evening, and skipped the arm and ab workout again. Dinner was left over of the stir fry from the night before...

Friday morning I woke up at 5:45 again, and after my workout and all my other morning tasks, I got to work and had a very big breakfast...scrambled eggs with milk, green onion and mushroom...


As a snack later I had a few pieces of a fruit salad I made which consisted of kiwi, blueberries and grapes...


And while it was not officially my cheat day yet, I allowed myself a cocktail (and a half) that afternoon when I joined my staff for our regular bi-weekly lunch...


When I got back to the office, I had a late lunch at about 4 o'clock which consisted of chicken breast with sauteed green onion, and some more of the soybean hummus.



After work I had lots of errands to run, and by the time I got home, cleaned and unpacked all my groceries, I wasn't very hungry and it was already after 8 o'clock.

By about 10 pm, I started to get a tiny bit hungry but didn't want to eat too much. Therefore, I had some grapes, pine nuts and mozzarella...


The next day was my cheat day and as usual, it was glorious. I made some chocolate chip cookies to start off the day with my coffee, and when I got to work I had some sourdough bread with avocado. Yum-um!

One of my patients at work had been promising me something for the past month, and since he knew it was my cheat day he brought me homemade absolutely incredible, fall-off the bone ribs!





For lunch, I stopped at one of my favorite new places and got myself two Polish dogs, some French fries at Arby's, and of course their most delicious horseradish sauce...later I had some potato chips...and for dinner, the left over ribs with some pasta which had butter, milk and cheese in it. For dessert I had some ice cream I'd been waiting 2 weeks for...and by the time I hit the hay I was stuffed.




Sunday morning I made some eggs with mushrooms, cheese, and cilantro and it was so unbelievably nasty I could barely touch it. Everything about it grossed me out and I still don't really understand why. I did try to make some pancakes, but they didn't turn out well, but the sauce I'd made on the side did...




I took a long nap that afternoon and when I woke up I was super hungry. So I made some scrambled eggs again with some mozzarella on the side, and a little bit of the soybean hummus which was left over. That tied me over until dinner. Now, dinner was fabulous, filling and healthy.

I made a sauteed bok choy fry up with jasmine rice and fried chicken in soy sauce and grape seed oil. Honestly, it was not heavy, just filling and really delicious!
