The Jesus Diet: Day 6
Day 6 was nearing the end of the first week and I was on a roll with the recipes, and starting to feel like I could get, not just healthy with this newly discovered diet, but also very creative.
Breakfast: an apple, coupled with hot water with lemon and honey (my scratchy throat was still taunting me)
Lunch: some of the leftover chicken and carrots from the night before
Dinner included two new recipes. Aside from some of the flatbread, I had some of the leftover fava beans, but added some scrambled eggs to the mixture (which included some half & half); and I had some of a new created hummus.
Recipe for Day 6:
Mint-Dill Hummus
Ingredients:
1. 1 head of fresh garlic
2. 1-2 cups extra virgin olive oil (I recommend either Greek, Italian or Israeli)
3. salt to taste
4. Dried chickpeas
5. 1 lemon
6. 2-3 sprigs of fresh dill
7. 2-3 sprigs of fresh mint
Instructions:
Make
sure to rinse your chickpeas twice before filling a large pot with
water, and soaking them overnight. The next day, drain the water, add
fresh cold water to the pot covering beans, and boil (medium heat) on
stove top for approximately 1 1/2 - 2 hours.
1. Heat up 1 1/2 cups of olive oil on the stove in a small pot.
2. Once it starts to crackle and pop, turn the heat down to low. Add unpeeled garlic cloves, without dicing or chopping them 3. cook until they turn golden (be careful not to burn them!)

In a food processor, add your cooked chickpeas (I would recommend half
of a bag of dried beans, which once they expand and are cooked will turn
into a full bag's worth); add the garlic (not the olive oil yet), a
pinch of sea salt, the mint and dill and juice of half a lemon
5. Once the lid is tightly secured on the food processor, begin to pulse, until all the beans start to become smashed.
6. Turn setting to "low"

Gradually pour in the heated olive oil while the processor is blending.
If you have finished the heated olive oil and the mixture is still not
creamy enough, add more (room temperature) olive oil
7. Taste to see if it needs any more salt.
