The Jesus Diet: Day 7
Sundays are my only day off. I work a full time job at the clinic, and while we do get out early on Saturdays, often after work I go to a second job and do some part-time work there as well. By the time Sunday rolls around all I want to do is hide under the covers and never wake up, but I have a lot of housework to do by then, including a ton of laundry and naturally, a ton of cooking. This is mainly because I like to prepare my meals for the week so that I don't have to do it after getting home so late each day.
There's nothing worse than coming home after a really long day at work and then having to slave over a hot stove/oven for an hour or two more. This way, everything is ready to go and I just have to heat it up in the oven. Oh yeah - forgot to mention, I don't use microwaves. They are super bad for you, and therefore it does take me longer to re-heat things, but it's worth not getting cancer or any other bad ailments that may arise from the magnetron.
The meals I prepared on Sunday were lamb patties (delicious), chickpeas, more flatbread (which is an effort and quite the mess, let me tell you), more of my delicious kale-chickpea soup, and French lentil salad, this time with kale and watercress.
One day I was able to be at home for lunch and added the Talipia fish atop the French lentil salad. just to change things up a bit.
New Recipes:
Lamb burgers
Ingredients:
1/2 lb. ground 100% grass-fed lamb
olive oil
1 white onion
1 (cage-free) egg
2-3 cloves garlic, minced
salt to taste
Instructions:
1. in a bowl, combine garlic, egg, lamb and white onion, with salt
2. mix together thoroughly with hands
3. form into very small patties
4. in a frying pan, heat up approximately 3-4 tbsp olive oil
5. add patties and heat on high-med heat for approximately 6-7 minutes on each side, or until golden brown and cooked thoroughly through
Sauteed Chickpeas
Ingredients:
1 cup previously boiled chickpeas
2 cloves garlic, minced
2 bay leaves
2-3 tbsp olive oil
Instructions:
1. Heat olive oil with garlic, until lightly browned; add bay leaves
2. Add chickpeas and stir frequently for approximately 6 minutes, or until chickpeas are golden brown
